Sauteed Mushroom Covered Baked Chicken

One of my favorite things to cook is chicken for three reasons: it's good, it's healthy, and it's easy. However, chicken two or three times a week can get a little old, so I try different things here and there to add a little variety. In this particular case, I smothered some baked chicken with a rosemary and garlic mushroom sauce. Let me explain.
 

This was one of those we-just-got-back-from-Walmart-and-don't-feel-like-cooking meals. We just threw some seasoned chicken in the oven while sauteed the mushrooms using fresh garlic, lots of rosemary, italian seasoning, a dash of Tony's seasoning, and a little of that Tuscany Blend dipping seasoning...YUM! The entire meal took about 20 minutes (the time it took to bake the chicken). By the time that was done, the mushrooms were ready to be poured on top. How easy? We really kept this meal simple and chose to not add any side dishes. However, IF you were going to serve this with something, try grilled/sauteed asparagus, garlic whipped potatoes, and/or a side salad...and now I'm hungry.
